The next dish in this ‘Cook in Under 10 Minutes’ segment is ‘Grits Pancakes’.

Let’s see its ingredients.

Semolina (RAWA)

Curd

ground peanuts

Salt to taste

Shredded cabbage

Chopped pepper

Grated carrots

Chopped chives

Bean sprouts

Then we have the chopped cilantro to decorate, and the lemon juice.

Let’s see the recipe for semolina pancakes.

PANCAKE BATTERY MIX:

First we have to take a bowl to mix.

Have half a cup of semolina.

Add to this half a cup of curd.

The amount of curd and semolina should be the same.

Add a tablespoon of ground peanuts and 3-4 grams of salt.

We have to soak it in two tablespoons of water.

Mix it well.

Let it soak in for about 3-4 minutes as long as the texture is not smooth.

By the time the grits are soaked in the curds, let’s create a mixture for the topping.

MIX FOR TOPPING:

Take a mixing bowl and add some shredded cabbage, followed by chopped bell pepper and shredded carrots. Then add grated onions and a little sprouts.

Now we will add about 2-3 grams of salt and we will add it well.

Now let’s check the dough.

You can add a drop or two of oil to the dough if you want, that way it would be greasy on the inside.

The grits mixture is almost done.

COOKING:

Now we will heat the pan to make pancakes.

Add 2-3 drops of oil or fat to the pan.

Now we will make some pancakes about 3-4 mm thick, and we will spread them very well.

We have to cook it over medium heat, so that the semolina is well cooked and acquires a nice color.

For when it cooks from the bottom, spread the topping that we had made towards the top.

It takes about 1 -1/2 minutes to cook it over medium heat.

There is an easy way to tell if the semolina pancake is cooking from the bottom or not.

If we tilt the pan slightly, then if the pancake is cooked, it will pop out of the base and move.

Flip the semolina pancake over and cook after one side cooks. You will find that the vegetables are very well dipped in the pancake.

Wait about 30 seconds so the top cooks well too and there is a nice golden color to the toppings.

The pancake is ready.

Garnish the semolina pancake with chopped cilantro and serve with tomato sauce!
