Grandma’s comfort food recipes

This is very popular for breakfast in many southern states, but has spread to most of the country. The trick to getting a very tasty sauce is to cook the flour and sausage together for a while before adding the milk, leaving the amount of browning you prefer fully open. What could be better than adding homemade cookies to your gravy? They are really easy to make and add a great flair to your food.

Grandma’s Flaky Buttermilk Cookies

2 1/2 cups all-purpose flour (and a little more for pans)

2 tablespoons of baking powder

1 teaspoon of sugar

1 teaspoon salt

8 tablespoons unsalted butter

1 cup buttermilk

2 tablespoons melted butter

Preheat oven to 425 degrees F. Sift flour, baking powder, and salt into a large mixing bowl. Stir all the ingredients then transfer to a food processor. Cut the butter into cubes and add it to the flour, pulse 6 to 7 times until the mixture looks like crumbs. Or, cut the butter into flour in the bowl, add buttermilk and stir with a fork until it forms a ball, don’t worry if it’s a little sticky. Place the dough on a floured surface and roll into a rectangle, about 1 inch thick. Fold it up and re-roll it gently. Repeat 6 times. Gently roll the dough out a little more, so that it forms a rectangle. Cut the dough into biscuits with a floured glass or a biscuit cutter. Do not turn the cutter when cutting, this will bend the edges of the cookie and it will not rise. If you have leftovers, form a new rectangle and cut out more cookies. Place the cookies on a baking sheet and place in the oven. Bake until golden brown, about 10 to 15 minutes. Spread the melted butter on top and enjoy. Makes 6 to 8 servings.

French bread casserole

5 cups of bread cubes

4 eggs

1 1/2 cups of milk

1/4 cup sugar (divided)

1/4 teaspoon of salt

1 teaspoon vanilla

1 tablespoon butter (softened)

1 teaspoon cinnamon

Preheat oven to 350 degrees F. Lightly grease an 8×8-inch baking pan. Cover the bottom of the pan cubes. In a large bowl, beat the eggs, milk, 1 Tbsp. sugar, salt and vanilla. For the egg mixture on the bread cubes. Sprinkle with butter and let rest for 10 minutes to allow the egg mixture to soak into the bread cubes. Combine the remaining sugar with the cinnamon and sprinkle over the bread mixture. Bake for 45 to 50 minutes or until the top is golden brown. For 4 people.
